This is a really tough one, because I like them all. I'd say it's a toss up between Blitzball and Triple Triad. Blitzball is certainly the most detailed, but TT was the most addictive. Sphere Break is pretty good too.

Triple Triad.  I was ace at that when I first played FF8. I got all the crazy hard cards to get, my friends were jealous. I was terrible at Tetra Master though, and Blitzball I was only good at after a ton of practice. Sphere Break was fun, but not as cool as Triple Triad.
